Special Quesadillas!

Special Quesadillas (aka sopaipillas.... without the cinnamon and sugar!)
1. Stir 4C flour, 2t baking powder, and 1t salt in bowl and cut in 4T shortening
2. Make a well in center, add 1 1/2C water and work into dough. Knead til smooth (just a minute or two),cover, and set aside for 20 min. 
3. Grate Mozzarella or Jack cheese (lots), set aside.
4. Heat 2” shortening or oil in heavy pan at med-high heat. 
5. Separate dough into 4, roll into balls.
6. Roll dough to 1/8” thick rounds on lightly floured board. 
7. Fill half with shredded cheese, roll second side over, and fold edges over like an empanada. 
8. Fry til golden on both sides, turning once. (If oil is hot, enough, the sopaipillas will puff and become hollow quickly.) 
9. Drain sopaipillas on paper towels, but serve hot! They’re better when crispy. And they’re filling, but so yummy!

MPM 8/28-9/3

My shepherd's pie was kinda like this... But I don't follow recipes, per se, I just use suggested ingredients
 Grilled Pizza and grilled corn and salad
Brinner.... Scrambled Eggs, biscuits, sausage, MAYBE some sausage gravy... And fruit
Hamburgers.... 
Beef Stir Fry with sweet potato fries!!
Teriyaki chicken, broccoli, noodle salad

DIY Headboard

I have been sans headboard since 2001.  I thought maybe I'd use a painting or make something, but I never got around to it.  That is, til Nana pushed my idea!

I wanted a canvas with meaningful writing.  But I couldn't afford a giant canvas!  We used painter's canvas.  At least a quarter of the price at Walmart!  Cut it to the desired size, Nana sewed a slip for a piece of wood, and I painted my desired text.  

PS, that was over a month ago!  Today I finally trimmed the wood, drilled small holes for the nails, nailed up one side, and using a level, finally tacked in the last nail.  

Tonight will be our first night with a headboard!  Next task, make the rest of the room not-so-institutional!!!

I know it looks crooked, but it's the camera girl, not the wall or the headboard!!!

I am excited about the meals this week!  Except for Lenny's.... It's not my favorite.  And they didn't honor my coupon here in Alaska.... I guess I don't have a reason to go back.... Except to get pancake puppies!  I love them!  But I love them even more when I make them at home!!!

MPM July 3-9


I love the USA! Tomorrow will be my 2nd Independence day on a military base, but my first 4th of July without fireworks.... It' too bright here in Alaska! With less than 5 hours of darkness (more like dusk!), we have to wait til December for the pyrotechnics! But snow and fireworks is actually a GREAT combo!
I'm still excited for the December display!

So on to the meal planning....

We have another yummy week ahead of us...

And did I mention I have a 5K on Saturday? Maybe I'll switch up the food. We'll have the salad the night before... And a salad all the other days!!! So, I will show off my 'wog'.... That's a walk/jog! Not fast, not slow, just from start to finish. That's my goal, to finish! And to complete it in under an hour. (I accomplished that at my last 5k, too, and I jogged less than a mile!) Everything I read about a 5K, everyone is worried about training like 2 months beforehand... That's not my style. My only worry is for my feet!

It's officially 'summer' on the calendar and our temperature finally got up to 80 degrees yesterday! 84, actually! After negative 47 just a few months ago, it actually felt HOT yesterday! There are only few places in town with AC, I will have to find them all!!


So this week is nice and easy and yummy!

Apparently I have forgotten all of my habits. All of my organized ways of life. I'm working on 'em! After 9 months of school and other busyness, I am slowly tackling tasks I've neglected and the piles I've left in corners.

So this we have a yummy and fairly healthy menu! I look forward to it!

Two words. Therapy.

I can never seem to prevent certain outcomes.... Like insomnia. Or fatigue. Both ends of the spectrum, eh? In retrospect, I know how to prevent them, but I can't really go back in time to make those changes! So I make the best of it. I wear myself out, or I count down the minutes until I can get some rest. I'm sure there's a happy medium, but I'm definitely not there!

On to better things... Summer vacation is longer than I remember! It's been so many years since I have had a summer when I didn't have to do anything! My list of 'things I'd like to do' grows each day. I've spent too much time daydreaming about what to do next instead of doing something! Maybe that's Alaska. It's so hard core, but so laid back. There is no in between. But that's a good thing, considering how extreme it is here!

So while I cannot dream in sleep, I will sit at the table and dream....

It's Father's day. My beloved is getting (whether he likes it or not!) a T-bone steak with other yummies! I think I'll make it like this:

1. Trim T bone steak, place in glass dish, add seasoning, cover, and let sit on counter 5 minutes.
Dry rub: salt, pepper, crushed red pepper flakes, and minced garlic.
2. Preheat grill to med-high, cook 3 minutes on each side, to desired doneness. Rest meat on plate.
3. Drizzle asparagus with EVOO, S&P, and throw those on the grill, too!
4. Serve to your daughter's father for father's day! (But let her do the seasoning so SHE made the steak!)
